Baked Rice Casserole
- 1 cup rice
- 3 tbsp olive oil (optional)
- 1 can cream of mushroom soup
- 1 can mushrooms with juice (small can)
- 1 1/2 cups water
- 1/2 block of Tofu, cubed (optional)
Mix all in a 8"x 8" square baking dish. Bake at 325 degrees for 1 1/2 hours.
